Brewing Method for Sanjin Creek Oolong Tea:

  1. Place about 5g of tea leaves into a teapot.
  2. Add 200cc of hot water (around 95-100°C).
  3. Let it steep and then pour out:
    • For the first to third infusions, steep for about 90 seconds.
    • From the fourth infusion onwards, increase the steeping time by 20 seconds for each subsequent brew.
  4. This method allows for approximately 8 infusions.

Taiwan High Mountain Tea is a term that originated from Lishan’s fruit farmer, Chen Jindi, who used to supply tea to former President Chiang Kai-shek. In his spare time, Chen introduced tea seedlings from Dongding and cultivated them in the 2500-meter-high mountain area. The tea he produced initially had no name, but since the tea was grown in high altitudes and was of different varieties, it was eventually named “High Mountain Tea.”
